Costing Worksheet

  • How many being served?______
  • How many of those are freebies?_______ (King, Queen, Prince, Princess, etc
  • Divide total number to serve by number of people a recipe feeds - this gives you how many recipes to make. For example: 80 people being served. Recipe feeds 8. 80 divided by 8 gives us 10 recipes.
  • Multiply the ingredients listed in the recipe by the number of recipes to make.

    For example: Fine Bread recipe
    2 cup flour x 10 recipes = 20 cups
    1 cup sugar x 10 recipes = 10 cups
    2 tbsp crushed anise seed x 10 recipes = 20 tbsp
    4 eggs x 10 recipes = 40 eggs
    1 tsp rosewater x 10 recipes = 10 tsp

TOTAL COST is $13.05

  • Add up all the ingredients for all the recipes being served.
  • Figure out the quantity required for each ingredient for the entire feast. For example, in the table above, we use 2 cups of flour in recipe 1, 4 cups in recipe 5, etc. All the recipes using flour are totaled together for a total of 20 cups.
  • Know what the unit of purchase is, and how many cups or however it is measured it comes in. For example: a five pound bag of flour yields approx. 20 to 25 cups of flour. (not really, but for this example it works)
  • Determine the number of units you need to purchase to fulfill your needs.
  • Multiply the number of units by the unit cost. This gives you your total cost for that ingredient.
  • Total all the ingredient cost totals for your total cost for feast.
